Delightfully moist banana bread muffins, perfect for breakfast or an afternoon snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas with the melted butter until well combined.
  3. Stir in the baking soda and a pinch of salt.
  4. Add the sugar, beaten egg, and vanilla extract, mixing until combined.
  5. Incorporate the flour until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool for a few minutes before serving.

Notes

For extra flavor, consider adding chocolate chips or nuts. Store leftovers in an airtight container for up to 3 days.
