Delicious bite-sized muffins made with ripe bananas, perfect for breakfast or a snack.

  • 2 ripe bananas, mashed
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1 egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. Mash the ripe bananas in a mixing bowl until smooth, then mix in the sugars.
  3. Stir in the melted butter, egg, and vanilla extract until well combined.
  4. Combine the flour, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the banana mixture, stirring gently until just combined.
  6. Spoon the batter into the muffin cups, filling each about two-thirds full.
  7. Bake for 10-12 minutes until a toothpick comes out clean.
  8. Cool the muffins in the pan for a few minutes before transferring to a wire rack.

Notes

For extra flavor, consider adding chocolate chips or nuts. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
