Delightful miniature apple pies filled with sweet, spiced apples and encased in buttery flaky pastry.

Ingredients

  • 2 apples, peeled and chopped into small cubes
  • 40g salted butter
  • 50g brown sugar
  • 12 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp lemon juice
  • 1/2 tsp cornflour
  • 3 tsp cold water
  • 2 sheets frozen shortcrust pastry, thawed
  • 1 egg, whisked for glazing

Instructions

  1. Prepare the Apple Filling: In a saucepan, combine the chopped apples, salted butter, brown sugar, cinnamon, nutmeg, and lemon juice. Simmer over medium heat until the apples are mostly softened and fragrant. Mix the cornflour with cold water to create a slurry, then pour it into the simmering apples. Stir continuously until the mixture thickens into a glossy filling. Remove from heat and let the filling cool.
  2. Preheat the Oven and Prepare the Pastry: Preheat your oven to 180°C (356°F). Using a round cookie cutter or the rim of a glass, cut out rounds from one sheet of the thawed pastry—this will give you enough for about 9 mini pies. From the second sheet, cut out strips about 1.5cm wide for making the lattice tops.
  3. Assemble the Mini Pies: Take about 1 tablespoon of the cooled apple filling and place it in the center of each pastry round. Carefully arrange two parallel strips of pastry over the filling. Then, add two more strips perpendicular to the first to form a beautiful lattice pattern. Trim any excess pastry around the edges and use a fork to press and seal the edges of the pies tightly.
  4. Bake the Mini Pies: Brush the tops of the assembled pies with the whisked egg to give them a luscious, golden finish. Bake in your preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp, filling your kitchen with a delightful aroma.
  5. Cool and Serve: Allow the mini pies to cool slightly before serving. If you’re not serving them immediately, let them cool completely on a wire rack. Enjoy them warm or at room temperature—each bite is a little piece of heaven!

Notes

For variations, consider adding dried cranberries or using puff or phyllo pastry.
