A heartwarming dish featuring tender chicken and earthy sweet potatoes, glazed with a delightful maple Dijon sauce.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons Dijon mustard
  • 3 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • 2 large sweet potatoes, peeled and cubed
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the maple Dijon glaze by combining Dijon mustard, maple syrup, olive oil, salt, and pepper in a mixing bowl.
  3. Coat the chicken breasts with the maple Dijon mixture.
  4. Arrange the cubed sweet potatoes on a baking sheet, then sprinkle with salt and pepper.
  5. Add the coated chicken breasts to the baking sheet with the sweet potatoes.
  6. Roast in the oven for 25-30 minutes until cooked through.
  7. Serve the chicken over sweet potatoes, garnished with fresh parsley.

Notes
