A refreshing twist on the classic Italian dessert, combining silky mascarpone with bright lemon and rich espresso.

Ingredients

  • 1 cup brewed espresso or strong coffee, cooled
  • 1/2 cup lemon juice
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • Lemon zest for garnish
  • Savoiardi (ladyfingers)

Instructions

  1. Whip the mascarpone cheese, heavy cream, sugar, and vanilla extract until soft peaks form.
  2. Mix the cooled coffee with lemon juice in another bowl.
  3. Dip each ladyfinger quickly into the coffee mixture.
  4. Layer half of the dipped ladyfingers in a serving dish.
  5. Spread half of the whipped mascarpone mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers.
  7. Top with the remaining mascarpone mixture and smooth it out.
  8. Refrigerate for at least 4 hours before serving and garnish with lemon zest.

Notes

For best flavor, chill overnight. Leftovers can be stored in the refrigerator for 2-3 days.
