A flavorful dish featuring crispy pecorino crusted chicken served with a creamy lemon sauce.

  • 4 boneless, skinless chicken breasts
  • 1 cup pecorino cheese, grated
  • 1 cup breadcrumbs
  • 2 lemons, zested and juiced
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Create the coating mixture by combining the grated pecorino cheese, breadcrumbs, lemon zest, salt, and pepper in a shallow dish.
  3. Prepare the chicken by dredging each breast in flour, then dipping in beaten eggs, and finally pressing into the pecorino breadcrumb mixture.
  4. Sear the chicken in hot olive oil for 3-4 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish and bake for 15-20 minutes or until cooked through.
  6. Prepare the creamy lemon sauce by melting butter in a pan, adding heavy cream and lemon juice, and simmering until slightly thickened.
  7. Plate the chicken hot with the creamy lemon sauce drizzled on top and garnish with fresh parsley.

Notes

This dish pairs well with garlic mashed potatoes or a light arugula salad.
