Deliciously soft muffins filled with sweet, tangy blueberries and a creamy center.

Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 1/2 cup milk
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Beat the softened cream cheese, sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract to the cream cheese mixture, and continue to mix until well combined.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Add the dry ingredients to the cream cheese mixture, alternating with the milk and melted butter.
  6. Fold in the blueberries gently.
  7. Fill each muffin liner with the batter, about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the muffins cool before serving.

Notes

Substitute Greek yogurt for cream cheese for a tangier flavor. Freeze them for up to 3 months.
