Jamaican Oxtail

A comforting dish of tender oxtail simmered in a rich, flavorful sauce, perfect for family gatherings.

Ingredients

  • 23 lbs oxtail
  • 2 medium onions, chopped
  • 45 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 2 carrots, sliced
  • 1 tbsp brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1 tsp pimento (allspice)
  • Salt and pepper to taste
  • Water (enough to cover oxtails)

Instructions

  1. Start by giving some love to your produce! Chop the onions, mince the garlic, and slice the carrots evenly.
  2. Warm a good drizzle of oil in a large pot over medium-high heat. Once hot, add the oxtails and allow them to brown for a few minutes.
  3. Remove the browned oxtails from the pot and set them aside. In the same pot, toss in the chopped onions and minced garlic. Sauté until the onions are soft and translucent.
  4. Add the browned oxtails back into the pot. Toss in the fresh thyme, sliced carrots, pimento, brown sugar, soy sauce, salt, and pepper.
  5. Pour in enough water to cover the ingredients by about an inch. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about two hours.
  6. Once the oxtails are tender and the sauce has thickened, it’s time to serve! Ladle the oxtail over a bed of fluffy rice or alongside soft dumplings.

Notes

Serve with fluffy white rice or boiled dumplings. Pairs well with fried plantains or a fresh side salad.
