  • 3 lbs beef chuck roast
  • 2 tsp Italian seasoning
  • 2 bell peppers (sliced)
  • 1 large onion (sliced)
  • 4 cloves garlic (minced)
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Gather Your Ingredients: Start by prepping your workspace! Slice the bell peppers and onion, then mince the garlic.
  2. Sear the Beef: In a skillet over medium-high heat, heat some oil and sear the seasoned beef chuck roast on all sides until browned (about 3–4 minutes per side).
  3. Sauté the Veggies: In the same skillet, toss in the sliced onions and bell peppers. Sauté for about 5 minutes until they soften, then add the minced garlic and sauté for another minute.
  4. Combine in the Cooker: Transfer the softened vegetables to a slow cooker or Dutch oven. Place the seared beef on top, and pour in the beef broth and Worcestershire sauce. Sprinkle with Italian seasoning.
  5. Slow Cook to Perfection: Cover and cook on low for about 8 hours or high for about 4 hours, or bake covered at 300°F for the same time until fork-tender.
  6. Shred and Serve: Once done, use two forks to shred the beef in the pot, stir back into the sauce, and serve on crusty rolls.

Notes

Searing the meat is crucial for building flavor. To lighten the dish, try serving in lettuce wraps instead of rolls.
