A comforting dish with tender chicken in a creamy sauce served over perfectly cooked rice with peas.

  • 4 chicken breasts
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat. Add chopped onion and garlic, sautéing until softened, about 2-3 minutes.
  2. Season the chicken breasts generously with salt and pepper. Add them to the skillet and cook until browned on both sides, about 5-7 minutes.
  3. Remove the chicken from the skillet and set it aside.
  4. Add uncooked rice to the same skillet and stir for 1-2 minutes to toast lightly.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  6. Return the chicken to the skillet, cover, and let everything simmer for about 20 minutes, until the rice is tender and the chicken is cooked through.
  7. Stir in the frozen peas for added sweetness and color.
  8. Serve warm and enjoy the comforting aroma of this hearty meal.
