A comforting and nutritious quesadilla filled with shredded chicken, cheese, and zesty ranch dressing.

Ingredients

  • 2 tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup black beans, drained and rinsed (optional)
  • 1/4 cup chopped green onions (optional)
  • Cooking spray or oil for frying

Instructions

  1. Heat your skillet over medium heat and spray it with cooking spray or drizzle with oil.
  2. Spread ranch dressing generously on one side of each tortilla.
  3. Layer the shredded chicken, cheese, optional black beans, and green onions on one tortilla.
  4. Assemble the quesadilla by placing the second tortilla ranch-side down on top.
  5. Cook until golden brown, about 3-4 minutes per side, flipping carefully.
  6. Slice into wedges and serve warm.

Notes

Pair with a side salad, guacamole, or salsa for a complete meal. Leftovers can be stored in an airtight container for up to 2 days.
