High-Protein Chicken Ranch Quesadilla

A delicious and hearty quesadilla filled with shredded chicken, cheese, and ranch dressing, perfect for any lunch or dinner.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup ranch dressing
  • 2 cups shredded cheese (cheddar or a cheese blend)
  • 4 large flour tortillas
  • 1 cup corn (optional)
  • 1/2 cup chopped green onions (optional)
  • Oil or cooking spray for cooking

Instructions

  1. Combine the chicken and dressing in a large bowl until well combined.
  2. Preheat the skillet over medium heat and add oil or cooking spray.
  3. Start with one tortilla in the skillet and sprinkle 1/2 cup of cheese over half of it.
  4. Layer on the chicken mixture and optional corn and green onions.
  5. Fold the tortilla over and cook for 3-4 minutes until golden brown.
  6. Flip the quesadilla and cook the other side for another 3-4 minutes.
  7. Repeat with the remaining tortillas, chicken mixture, and cheese.
  8. Slice into wedges and serve warm.

Notes

Leftovers can be stored in the refrigerator for up to 3 days. Perfect for meal prep and reheat beautifully.
