A flavorful and healthy twist on pasta with garlic, tender chicken, and fresh spinach, perfect for any weeknight dinner.

Ingredients

  • 8 ounces whole wheat pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breast, diced
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add diced chicken and cook until browned and fully cooked through, about 6-8 minutes.
  5. Stir in chopped spinach, Italian seasoning, salt, and pepper.
  6. Add the cooked pasta to the skillet and toss everything together.
  7. Remove from heat and stir in grated Parmesan cheese until melted.
  8. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a skillet, adding a splash of water or broth.
