A flavorful bowl featuring grilled chicken bites marinated in maple syrup and sriracha, served with creamy coconut rice and mango avocado salsa.

  • 1 lb chicken bites
  • 1/4 cup maple syrup
  • 2 tablespoons sriracha
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 tablespoon chili powder

Instructions

  1. Mix together the maple syrup and sriracha in a bowl to create a marinade.
  2. Add chicken bites and let marinate for at least 30 minutes.
  3. Cook the jasmine rice according to package instructions, using coconut milk instead of water.
  4. Combine diced mango, avocado, red onion, and lime juice in a separate bowl for salsa.
  5. Preheat grill to medium-high heat and grill marinated chicken for 6-8 minutes until charred.
  6. Mix mayonnaise and chili powder in a small bowl for the chili mayo.
  7. Assemble the bowl with coconut rice, grilled chicken, salsa, and chili mayo.

Notes

Don’t skip the marination step to enhance flavor. Adjust sriracha for desired heat level.
