Wholesome Greek Chicken Bowls featuring grilled chicken, fluffy quinoa, and fresh vegetables topped with a zesty dressing.

  • 2 chicken breasts
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or a grill pan over medium-high heat. Season the chicken breasts generously with salt, pepper, and dried oregano. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from heat and let rest for a few minutes.
  2. In a small bowl, whisk together olive oil and red wine vinegar to create a zesty dressing.
  3. In meal prep containers, layer each bowl starting with the cooked quinoa. Top it with the sliced chicken, cherry tomatoes, cucumber, red onion, kalamata olives, and crumbled feta cheese.
  4. Drizzle the tangy dressing over the top of each bowl.
  5. Cover and store in the refrigerator for meal prep, ready to be enjoyed throughout the week.
