  • 4 chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh herbs (such as thyme or rosemary)
  • Salt and pepper to taste
  • 2 cups mashed potatoes
  • 1 cup chicken broth
  • 1 tablespoon butter
  • 1 tablespoon heavy cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil over medium heat.
  3. Season the chicken breasts with salt, pepper, minced garlic, and fresh herbs.
  4. Sear the chicken breasts for about 5-7 minutes on each side until golden brown.
  5. Transfer the pan to the preheated oven and bake for 20-25 minutes until cooked through.
  6. Boil peeled and chopped potatoes in a pot of water until tender, about 15 minutes. Drain and mash with butter, heavy cream, salt, and pepper.
  7. Add 1 cup of chicken broth to the same pan to create the pan sauce, scraping up any browned bits.
  8. Serve the chicken over creamy mashed potatoes and drizzle with pan sauce.

Notes

Pairs well with steamed green beans or a fresh garden salad. Store leftover chicken in an airtight container for up to 3 days.
