A delightful dish of tender steak bites paired with deliciously roasted baby potatoes, infused with garlic and olive oil.

Ingredients

  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
  • 2 cups baby potatoes, halved
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon oregano (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the olive oil, minced garlic, salt, black pepper, and optional oregano in a large bowl. Add the steak pieces and toss to coat.
  3. Toss the halved baby potatoes with olive oil, salt, and pepper in a separate bowl.
  4. Spread the potatoes out on a baking sheet and bake for 20 minutes.
  5. Add the marinated steak bites to the baking sheet and bake for an additional 10-15 minutes until cooked to desired doneness.
  6. Remove from the oven, sprinkle fresh parsley over the dish, and serve hot.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
