These colorful and delightful cookies are a vibrant tribute to Fruity Pebbles cereal, combining nostalgia with a deliciously sweet taste.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup Fruity Pebbles cereal (plus extra for topping)
  • Frosting (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Creaming together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add in the flour and mix until just combined; do not over-mix.
  5. Fold in the Fruity Pebbles gently to maintain their crunch.
  6. Drop tablespoon-sized mounds of dough onto the prepared baking sheets, spacing them two inches apart.
  7. Bake for 10-12 minutes until the edges are golden but the centers remain soft. Allow them to cool slightly before frosting.

Notes

For thicker cookies, chill the dough for about 30 minutes before baking. Don’t over-bake to keep them soft!
