A delightful twist on the classic tiramisu featuring velvety mascarpone, rich Amaretto liqueur, and tart cherries layered with soft ladyfingers.

Ingredients

  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • 1/2 cup Amaretto liqueur
  • 24 ladyfinger cookies
  • 1 cup cherries, pitted and halved
  • Chocolate shavings for garnish
  • Fresh mint leaves for garnish

Instructions

  1. Combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
  2. Mix the cooled brewed coffee and Amaretto in a shallow dish.
  3. Dip each ladyfinger into the coffee mixture, soaking briefly, then lay them in a 9×13-inch dish.
  4. Spread half of the mascarpone mixture over the layer of ladyfingers.
  5. Add a layer of halved cherries on top of the mascarpone.
  6. Repeat the layering process with the remaining ladyfingers, mascarpone mixture, and cherries.
  7. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  8. Before serving, garnish with chocolate shavings and fresh mint leaves.

Notes

Make sure the mascarpone cheese is at room temperature for easier mixing. Feel free to use gluten-free ladyfingers for a gluten-free option.
