Delightful banana bread topped with a crunchy streusel that elevates it to a new level, all made in one bowl for minimal cleanup.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the baking soda and a pinch of salt.
  5. Add the sugar, beaten egg, and vanilla extract; mix until well combined.
  6. Stir in the flour and oats until just incorporated.
  7. Combine brown sugar, cinnamon, and chopped nuts in a small bowl for the streusel topping.
  8. Pour the batter into the prepared loaf pan and sprinkle the streusel topping over the top.
  9. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store leftovers wrapped in plastic wrap or in an airtight container at room temperature for up to 3 days. Can freeze individual slices for up to 3 months.
