Ingredients

  • 2 cups water or vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 cup cooked chicken or tofu, cubed
  • 1 avocado, sliced (for topping)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Cook the quinoa: In a pot, combine quinoa and water (or broth) and bring to a boil. Reduce heat, cover, and let it simmer for about 15 minutes until the quinoa is fluffy and the water is absorbed.
