Delightful and easy-to-make banana muffins with a crunchy streusel topping, perfect for breakfast or snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold butter, cut into pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. Mix the mashed bananas with melted butter until smooth and creamy.
  3. Stir in the sugar, beaten egg, and vanilla extract until well combined.
  4. Sprinkle the baking soda and a pinch of salt over the mixture and mix well.
  5. Fold in the all-purpose flour until just incorporated.
  6. Combine brown sugar and ground cinnamon in a small bowl, then add cold butter pieces to create a crumbly mixture.
  7. Fill the muffin cups with the batter and top each with the streusel mixture.
  8. Bake for about 18-20 minutes or until a toothpick comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring to a wire rack.
