Indulge in luxurious dark chocolate truffles infused with fresh raspberries for a delightful treat.

Ingredients

  • 8 oz dark chocolate (70% cocoa or higher)
  • 1/2 cup heavy cream
  • 1/2 cup fresh raspberries
  • 1/4 cup cocoa powder (for rolling)
  • 2 tbsp powdered sugar (for dusting)

Instructions

  1. Chop the dark chocolate into small pieces and place it in a heatproof bowl.
  2. Simmer the heavy cream in a separate saucepan until just simmering.
  3. Pour the hot cream over the chopped chocolate.
  4. Stir the mixture until it becomes smooth and silky.
  5. Fold in the fresh raspberries gently.
  6. Cover the ganache with plastic wrap and chill in the refrigerator for about 2 hours.
  7. Scoop out the ganache using a melon baller or a teaspoon.
  8. Roll each portion into smooth balls with clean hands.
  9. Coat the truffles in cocoa powder or powdered sugar before serving.
