Indulge in these rich dark chocolate truffles filled with fresh raspberries, perfect for any occasion.

Ingredients

  • 8 oz dark chocolate (70% cocoa or higher)
  • 1/2 cup heavy cream
  • 1/2 cup fresh raspberries
  • 1/4 cup cocoa powder (for rolling)
  • 2 tbsp powdered sugar (for dusting)

Instructions

  1. Chop the chocolate into small pieces and place in a heatproof bowl.
  2. Heat the heavy cream in a saucepan over medium heat until just simmering.
  3. Melt the chopped chocolate by pouring the hot cream over it and stirring until smooth.
  4. Fold in the fresh raspberries gently.
  5. Chill the ganache in the refrigerator for about 2 hours until firm.
  6. Scoop out portions of the ganache and roll into balls.
  7. Coat the truffles in cocoa powder or powdered sugar.
