A luxurious dark chocolate mousse layered with fresh raspberry sauce, perfect for celebrations and sweet gatherings.

Ingredients

  • 8 oz dark chocolate, chopped
  • 2 cups heavy cream
  • 3 large eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup raspberries
  • 1/4 cup water
  • 1 tablespoon gelatin

Instructions

  1. Melt the dark chocolate in a double boiler until smooth, then let it cool slightly.
  2. Whip the heavy cream in a large mixing bowl until soft peaks form.
  3. Beat the eggs with the sugar and vanilla extract until pale and voluminous.
  4. Fold the cooled, melted chocolate into the egg mixture carefully.
  5. Incorporate the whipped cream into the chocolate mixture using gentle motions.
  6. Prepare the raspberry sauce by heating raspberries, water, and gelatin until dissolved.
  7. Layer the raspberry sauce at the bottom of a springform pan.
  8. Pour the chocolate mousse over the raspberry layer, smoothing the top.
  9. Refrigerate the cake for at least 4 hours until set.
  10. Garnish with fresh raspberries before serving.
