Indulge in delicate, airy macarons filled with luscious dark chocolate ganache and fresh raspberries for a perfect treat.

  • 1 cup almond flour
  • 1 3/4 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 4 large egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1/2 cup fresh raspberries
  • 1/2 cup dark chocolate ganache

Instructions

  1. Preheat your oven to 300°F (150°C) and line your baking sheets with parchment paper.
  2. Sift together the almond flour, powdered sugar, and cocoa powder to ensure a light and airy shell.
  3. Beat the egg whites until frothy. Add the cream of tartar, then gradually add the granulated sugar.
  4. Continue beating until stiff peaks form – this is crucial for the perfect macaron texture!
  5. Fold the dry ingredients into the egg whites until fully combined.
  6. Transfer the mixture to a piping bag and pipe circles onto the prepared baking sheets.
  7. Let them sit for 30-60 minutes until a skin forms on the surface.
  8. Bake for 15-20 minutes. Allow to cool completely on the baking sheet.
  9. Fill half of the macaron shells with dark chocolate ganache and top each with a fresh raspberry.
  10. Sandwich with another shell and enjoy!

Notes
