  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 2 tablespoons olive oil
  • 1/4 cup butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the breadcrumbs, grated Parmesan cheese, garlic powder, salt, and black pepper in a bowl.
  3. Dredge the chicken breasts in the flour, then dip them into the beaten eggs, and coat thoroughly with the breadcrumb mixture.
  4. Heat olive oil in a skillet over medium heat and cook the coated chicken breasts for 5-7 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake for 15 minutes.
  6. Add butter and minced garlic to the same skillet and cook over medium heat for about 1 minute.
  7. Stir in the heavy cream and chicken broth; allow the mixture to simmer until slightly thickened.
  8. Plate the chicken, drizzle the garlic sauce on top, and garnish with freshly chopped parsley.

Notes

Pairs well with a light salad or roasted vegetables. Store leftovers in an airtight container in the fridge for up to 3 days.
