A delightful blend of flavors with juicy, spiced chicken served with colorful vegetables and fluffy rice.

Ingredients

  • 2 cups cooked rice
  • 2 boneless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • Salt and pepper, to taste
  • Green onions, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Coat the chicken breasts with olive oil and season evenly with Cajun seasoning, salt, and pepper.
  3. Place the seasoned chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
  4. Sauté the bell pepper and onion in a skillet over medium heat until softened, about 5-7 minutes.
  5. Add the corn and black beans to the skillet; stir and cook for another 5 minutes.
  6. Once the chicken is done, let it rest for a few minutes before slicing it into strips.
  7. Serve the cooked rice topped with the sautéed vegetables and sliced chicken.
  8. Finish off with a sprinkle of green onions.

Notes

Great as leftovers! Store in an airtight container in the fridge for up to 3 days.
