A warm and comforting soup made with creamy tomatoes and ravioli, perfect for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 package (9 oz) refrigerated cheese ravioli
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until it becomes translucent, about 4-5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in the diced tomatoes (with juices) and vegetable broth. Bring to a simmer.
  5. Add the ravioli, cooking according to package instructions, usually about 4-5 minutes.
  6. Reduce the heat and stir in the heavy cream. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil.

Notes

Pairs well with a crispy green salad and crusty garlic bread. Store leftovers in an airtight container for 3-4 days, or freeze without ravioli for up to 3 months.
