  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons red curry paste
  • 4 cups vegetable or chicken broth
  • 1 can (14 oz) coconut milk
  • 2 cups assorted greens (e.g., spinach, kale)
  • 1 cup dumplings (store-bought or homemade)
  • Salt to taste
  • Lime wedges for serving
  • Fresh cilantro for garnish

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  4. Add the red curry paste and cook for another minute while stirring.
  5. Pour in the broth and bring to a boil. Reduce the heat to a simmer and stir in the coconut milk.
  6. Gently add the dumplings and cook according to the package instructions.
  7. Stir in the assorted greens and cook until just wilted, about 2-3 minutes.
  8. Season with salt to taste.
  9. Ladle into bowls and garnish with fresh cilantro and lime juice before serving.

Notes

For extra spice, add fresh chili or a splash of chili oil. Store leftovers in an airtight container for up to 3 days.
