A nostalgic and comforting creamy potato casserole that brings warmth and joy to any gathering.

Ingredients

  • 2 pounds potatoes, peeled and sliced
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/4 cup chopped green onions or chives (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sliced potatoes until tender, about 10-15 minutes. Drain and cool slightly.
  3. Mix together the heavy cream, milk, butter, salt, and pepper in a separate bowl.
  4. Layer half of the cooked potatoes in a greased casserole dish, spreading evenly.
  5. Pour half of the creamy mixture over the potatoes, then sprinkle with half of the shredded cheese.
  6. Repeat the process with the remaining potatoes, cream mixture, and cheese.
  7. Bake for 30-35 minutes until golden and bubbly.
  8. Cool slightly before serving and garnish with green onions or chives if desired.

Notes

This casserole can be made ahead of time and is great for gatherings. It pairs beautifully with roasted meats or a crisp green salad.
