Ingredients

  • 3 cups boneless, skinless chicken breasts (diced)
  • 3 cloves fresh garlic (minced)
  • 1 cup carrots (diced)
  • 1 cup frozen peas
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 cup orzo pasta

Instructions

  1. Prepare your ingredients by dicing the chicken and carrots, and mincing the garlic.
  2. Sauté the chicken in a large skillet over medium heat with olive oil until golden brown, about 6-8 minutes.
  3. Add the diced carrots and minced garlic, cooking for an additional 2 minutes.
  4. Combine the chicken broth and heavy cream, stirring gently to combine.
  5. Cook the orzo pasta along with frozen peas and dried thyme for 10-12 minutes until al dente.
  6. Serve warm, garnished with extra thyme.

Notes

Always taste and adjust seasoning. Use any small pasta if orzo is unavailable. For gluten-free, substitute orzo with gluten-free pasta.
