Fluffy pancakes infused with a sweet cinnamon-sugar swirl and topped with cream cheese glaze, perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/4 cup cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. In a comfortable-sized mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk them together until fully integrated.
  2. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  3. Gently fold the wet ingredients into the dry mixture. Be careful not to overmix; a few lumps are fine!
  4. In a small bowl, combine the brown sugar and cinnamon.
  5. Preheat your skillet over medium heat. Once hot, pour in about 1/4 cup of pancake batter, and swirl the cinnamon-sugar mixture into the top.
  6. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  7. While your pancakes cool, prepare the cream cheese glaze by mixing cream cheese, powdered sugar, and milk until smooth.
  8. Stack the pancakes and drizzle the cream cheese glaze on top, adding extra cinnamon-sugar if desired.

Notes

Serve with fresh fruit, whipped cream, or crispy bacon. Store leftovers in an airtight container for up to three days.
