A comforting dish featuring juicy chicken in a creamy garlic sauce served over linguine, perfect for weeknight dinners.

Ingredients

  • 2 chicken breasts
  • 8 oz linguine or spaghetti
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Once cooked, drain and set aside.
  2. Heat 3 tablespoons of olive oil in a large skillet over medium heat.
  3. Sear the chicken breasts, seasoned with salt and pepper, until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
  4. Add the minced garlic and red pepper flakes to the skillet; sauté for about 1 minute until fragrant.
  5. Pour in the chicken broth, bringing it to a gentle simmer.
  6. Stir in the heavy cream and grated Parmesan cheese, thickening for a few minutes.
  7. Slice the cooked chicken and return it to the skillet to coat in the creamy sauce.
  8. Serve the creamy chicken scampi mixture over the prepared linguine, garnished with fresh parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half. Add sautéed spinach or sun-dried tomatoes for texture.
