  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup full-fat coconut milk
  • 2 tbsp brown sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • Juice of 1 lime (about 3 tbsp)

Instructions

  1. Mix together the full-fat coconut milk, low-sodium soy sauce, minced garlic, brown sugar, and lime juice for the marinade.
  2. Cut the chicken breasts into bite-sized pieces and add them to the marinade; refrigerate for at least 1 hour.
  3. Soak wooden skewers in water for about 30 minutes.
  4. Thread the marinated chicken onto the soaked skewers.
  5. Preheat your grill or grill pan over medium-high heat.
  6. Cook the skewers on the grill for about 5-7 minutes on each side, rotating until cooked through.
  7. Whisk together peanut butter, soy sauce, lime juice, brown sugar, and coconut milk for the sauce.
  8. Serve the skewers drizzled with the peanut sauce alongside extra for dipping.
