A creamy and hearty Cajun Potato Soup featuring smoked sausage, perfect for cozy gatherings or weeknight dinners.

Ingredients

  • 1 lb smoked sausage, sliced
  • 4 cups potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Sauté the sausage in a large pot over medium heat until browned.
  2. Add the onion and garlic, cooking until the onion becomes translucent.
  3. Stir in the diced potatoes followed by the chicken broth.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.
  5. Stir in the Cajun seasoning and heavy cream.
  6. Add salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions.

Notes

Serve with crusty bread or homemade biscuits for the perfect meal. Leftovers can be stored in the fridge for up to 3 days or frozen for 2 months.
