Delightful cookies bursting with the classic flavors of Boston Cream Pie, featuring a soft vanilla base filled with creamy pudding and topped with rich chocolate frosting.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup vanilla pudding mix
  • 1 cup chocolate frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Combine the flour, baking powder, and salt in a separate bowl, then mix into the wet ingredients until just combined.
  5. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Allow cookies to cool completely on a wire rack.
  8. Fill each cookie with vanilla pudding.
  9. Top each cookie with a generous swirl of chocolate frosting.

Notes

For added decorations, sprinkle crushed nuts or mini chocolate chips on top of the frosting. If short on time, opt for store-bought pudding and frosting.
