  • ½ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup whole milk
  • 2 tsp pure mint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together all-purpose flour, cocoa powder, baking powder, and salt until well mixed.
  3. Beat the softened unsalted butter with granulated sugar until light and fluffy.
  4. Add the large eggs to the butter mixture one at a time, mixing well after each addition.
  5. Stir in the whole milk and pure mint extract.
  6. Gradually add the dry mixture into the wet ingredients, mixing until just combined.
  7. Gently fold in the semi-sweet chocolate chips.
  8. Divide the batter evenly between the prepared pans and bake for 25-30 minutes.
  9. Allow the cakes to cool in the pans for a few minutes before transferring to a wire rack.
  10. Once cooled, frost with your favorite mint frosting.
