A delightful twist on a classic dish, this Bang Bang Fried Rice combines fluffy rice, crunchy vegetables, and a spicy kick from sriracha.

Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 2 green onions, chopped
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the mixed vegetables and sauté until tender, about 3-4 minutes.
  3. Push the vegetables to one side and crack the eggs into the other side. Scramble until fully cooked.
  4. Add the cooked rice to the skillet and mix well.
  5. Pour in the soy sauce and sriracha, stirring to combine.
  6. Season with salt and pepper, and let cook for an additional 2-3 minutes.
  7. Garnish with the chopped green onions before serving.

Notes

Use day-old rice for best results; it allows the grains to firm up, making it easier to fry. Adjust sriracha for desired spice level.
