Deliciously fluffy beignets with a hint of vanilla, perfect for breakfast or a sweet snack.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. Mix the dry ingredients: In a bowl, combine the flour, sugar, baking powder, and salt.
  2. Whisk the wet ingredients: In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter.
  3. Combine the mixtures: Gently fold the wet ingredients into the dry ingredients until just mixed.
  4. Heat the oil: In a deep fryer or large pot, heat oil to around 350°F (175°C).
  5. Fry the beignets: Drop the batter by spoonfuls into the hot oil, frying until golden brown, about 2-3 minutes.
  6. Drain the beignets: Remove them from the oil and drain on paper towels.
  7. Dust and serve: Generously dust with powdered sugar before serving.

Notes

Serve warm with coffee or hot chocolate. Best enjoyed fresh, can last up to 2 days stored properly.
